lamb chops.

When I got the job offer for my current position, Mark and I decided that it would be best if Mark took a turn at working part time and staying home with Makai. It was great! It gives him a chance to bond with Makai the way I have, go back to finish school, work on his small craft brewing business, and it gives me a break from tedious housework and kiddo tantrums. Yes, budgeting is still tight, but it felt right to have someone with Makai (omg preschool and daycare are stupid expensive) and give mark a little break from working as hard as he had.

So with staying home, it's up to Mark to plan/cook dinner every night! LOVE IT! Last night he got a little fancy and made some a this. 


Baked lamb chops with French bread and fresh bruschetta on lightly buttered noodles. Yum! 


There was also beer involved.


It was really delicious. Here's how he cooked it:

Lamb chops:
Pre-heat oven to 450* 
Season lamb chops with fresh basil and Montreal steak seasoning
Place lamb chops in oven for about 10-15 min each side
(Keep on one side until browned and blood pools up top, then flip)

Brushcetta:

It's basically fresh tomato, garlic, and basil with olive oil and balsamic. Done. Italian salsa. 

Noodles is kind of a boil and drain thing. 

BAM. Dinner.


Then I got to do some light reading for work with dessert. Mark brought home a lovely surprise of Three Twins - Lemon Cookie Ice cream for dessert. Amazeballs.
