This recipe is based off of the Filipino style Fruit Salad. Don't let the name fool you - this thing is swimming in sweetened condensed milk and table cream.
Here's what I used:
1 14 oz. can of sweetened condensed milk
1 7.6 oz can of table cream
3 cans of mixed fruit with 100% juice
reserve juice of 1 can and completely drain other 2
1/8th cup of ground chia seeds
- mix together sweetened condensed milk, table cream, reserved juice, and chia seeds.
- pour in 3 cans of mixed fruit
- mix until fruit is completely covered
- freeze. done.
- note: to serve, you may need to thaw this slightly. (about 10 minutes at room temp)
Some additional options:
- If you don't want this to be EXTRA sweet, which it can be, feel free to limit the amount of cream mixture you add and/or add additional sliced fresh fruit. (some popular options: blueberries, strawberries, pineapple, coconut, apples and sliced grapes)
- Add in some nata de coco for a nice change in texture. It's fibrous, but not really healthy either.
Personally, I like separating the mixture into 3 smaller containers so that I can slightly defrost in batches. Typically, this dish is served completely thawed and chilled, but I like it mostly frozen. Makai calls it "fruit ice cream." And since I happen to be an ice cream addict, I was on board with the name.
