veggies with a side of veggies.


Veggies...with a side of veggies. Or should I say "Greens... with a side of greens."?

I'm sure you don't care too much for either. 

I've told you my whole "fruit people" and "veggie people" shpeal before, so I suppose I won't get into it again, but I do love my veggies! It's actually slightly uncomfortable for me to go a meal without some sort of veggie (I totally count french fries). Perhaps growing up with Popeye was a positive influence after all! I've been contemplating the thought of "meatless Mondays," however, Mark didn't seem too keen on the idea. I'll just pretend I'm being healthy with all my veggie options... even if all of it is fried and doused in butter.

And no, that's not actually all we ate for dinner (although I, personally, would not have been that disappointed). For a quick dinner, Mark baked up some of my favorite Trader Joe's frozen Orange Chicken. It is most definitely a staple that I will always buy when I make a trip to TJ's. It's so easy, simple, un-fried, tasty, and quick! Then we just cook a couple of sides like the above, and dinner is served. This night, I paired it with some super simple chili green beans and sauteed kale. 



Chili Green Beans:
1 lb bag Fresh green beans (I love getting the steam-in-bag kind for ease)
about 1 tsp olive oil
about 1 tsp sesame seed oil
Asian crispy chili oil (also mentioned in my top ramen post!)
  • VERY LIGHTLY steam green beans (slightly undercooked is best)
  • pour oils into skillet or wok.
  • pour steamed green beans in pan and mix in chili paste and crispy chili bits to taste (remember. a little goes a long way here!)
  • simmer/fry for about 5-10 minutes depending on how cooked you like your beans.

Sauteed Kale:
1 tbsp olive oil
 about 3 hand fulls of chopped kale
1 packet concentrated chicken broth packets
  • pour in enough oil to lightly cover kale in pan
  • toss kale in and sautee for 2-3 mins. until leaves turn a bright green
  • slowly mix in concentrated chicken broth to taste
  • continue to sautee until leaves have just wilted
